Today’s pizza is pizza with truffle cheese. A delight of white pizza where the protagonist is our cheese with truffle flakes, available in our La Bottega del Tartufo stores and in our online store!
Let’s see what ingredients we need:
- 500 gr flour TYPE 0 (or TYPE 2) (stone milled)
- 15 gr salt up (whole wheat)
- water (room temperature)
- 2 tablespoons olive oil (extra virgin)
- 15 gr mother yeast (dried)
- 1 mozzarella fior di latte
- cheese with truffle (SHOP HERE)
- basil to taste (large leaf
Start with the dough: Combine the dried 🌾 with the dried sourdough mixing the ingredients thoroughly Aggiungi Add the water a little at a time 💦 until the dough is smooth and homogeneous: you will be able to form a ball of dough that you will have to work and beat vigorously 💪 on your work surface to be able to develop your gluten shirt and make your pizza lighter and more fragrant with Gorgonzola cream and summer truffle and truffle sauce. Let the dough rest for about 2 hours in a container covered with a damp cloth.
👉 THE STRAIGHT: put it to rise inside the oven leaving only the light on: it will create the right temperature to make it grow. Add a tablespoon of extra virgin olive oil to your dough to spread it properly into the pan.
Cut the cheese into irregular pieces, do the same thing with the mozzarella fior di latte. With the ready-made pizza base you can proceed with the next step: put cheese, mozzarella, a few basil leaves and a drizzle of extra virgin olive oil on top of our pizza. The pizza with truffle cheese is ready to be cooked.
Now put your pizza in the oven ♨️ preheated to 250 ° for about 20 minutes (cooking times may vary depending on the type of oven you have at home: traditional, ventilated or gas). In this case we have chosen to cook on a wood-fired oven as tradition teaches. Voila, our truffle cheese pizza is ready !!!
